Are we limited to one SSH login per account?

Or is there a way for us to create multiple users?

You should be able to ssh in multiple times/over multiple connections

Is it possible to do so with additional sets of credentials?

Not to the same account. You could use the teacher/student relationship to give one account access to the files of another (the teacher account has access to the student account)
